Ru, of Nina Tsuen Wan West, has a master of Cantonese cuisine at its helm.  Ng Cheung Kong has run kitchens for two decades, both in Nanjing and Hong Kong, where he was most recently Head Chef of the renowned Hong Kong Bankers Club.
